I made mushroom soup a few days ago and wasn't too happy with it. I tried again today and realized that THIS was the soup I had been craving.
Sautéed garlic, ginger, and mushrooms for a few minutes, then poured in chicken stock and brought to a simmer. I added lemongrass and soy sauce for flavor and finished it with rice noodles and fresh scallions for a bit of a crunch. Perfect! :)
