Tomato + Rice Soup


I'm on a soup kick. I finally ended up processing the rest of the tomato purée (about 18 cups from 12lbs of tomatoes), and finally stuck 15 cups in the freezer. Those tomatoes came out so well, I thought I'd made another soup tonight. This is one that Mom used to make for us as kids - tomato broth and rice. I simply mixed equal parts tomato purée and chicken stock (2 cups each), added cooked black rice (1/2 cup dry), and seasoned with soy sauce. Simple and perfect :)
