Spicy Lentil Soup



I hosted Mina and Natalie for dinner tonight. The weather continues to suck, so I thought soup might make the perfect meal. As I was taking inventory of my pantry and freezer, I came across the following ingredients: dal, veggie stock, gazpacho. I added an onion, couple carrots, celery, and various spices (saffron, Hungarian paprika, Spanish paprika, cayenne pepper, allspice, bay leaves, sesame oil, Sichuan pepper, smoked chili oil, preserved lemon...basically I dumped half my spice cabinet into the pot). I puréed about half the soup in the pot itself, and the hodgepodge of flavors melded together exactly as I wanted. 

Natalie brought over Trader Joe's chocolate chip cookies, so we baked those, too :)
